Happy Friday 🥳 When the weekend rolls around, so does meal prep and what better way to kick off your week than with some no bake energy balls! These energy balls are packed with nutrients, providing a quick and delicious energy boost. The combination of peanut butter, flax seeds, hemp oil, and whole wheat flour offers a tasty, healthful treat for when you need a pick-me-up 👍🏼 Ingredients: • 1 cup old-fashioned oats • 1/2 cup peanut butter • 1/3 cup honey or maple syrup • 1/4 cup whole wheat flour • 1/4 cup flax seeds • 1/4 cup mini chocolate chips • 1ml Essentials hemp oil • 1 teaspoon vanilla extract • A pinch of salt (optional) Instructions: • In a large mixing bowl, combine the old-fashioned oats, whole wheat flour, flax seeds, and mini chocolate chips. Mix well. • In a separate microwave-safe bowl, combine the peanut butter and honey (or maple syrup). Microwave for about 20-30 seconds, or until the mixture is easy to stir. • Stir in the hemp oil and vanilla extract into the peanut butter and honey mixture. • Pour the peanut butter mixture over the dry ingredients and mix thoroughly until all the ingredients are well combined. You can add a pinch of salt if desired. • Place the mixture in the refrigerator for about 20-30 minutes to make it easier to handle. • After cooling, take small portions of the mixture and roll them into bite-sized energy balls. • Place the energy balls on a tray or a plate lined with parchment paper. • Once you've rolled all the mixture into balls, you can refrigerate them for a couple of hours to firm up. • Your no-bake peanut butter energy balls are ready to enjoy! Store them in an airtight container in the refrigerator for longer shelf life.
